The Champion Choc-Chip Cookie


Okay, in case you didn't know it yet, here's a golden rule of harmfree, grainfree, painfree cooking...

You can bake with legumes!!! Woot woot & extended voluminous celebration (btw, legumes are aka beans, pulses, vegetarian protein, planet-kind sustenance). The combination of legume and seed means your cookies provide real complete protein (all essential amino acids) which, in contrast to grain-based cookies, will actually balance your blood sugar. On top of that, the fibre content (approx 4 times that of refined grain) will provide pre-biotic benefits helping your bowel movement and your microbiome. Pretty awesome, huh?



In essence, replace the grain for a legume (in this case we've used chick peas for their colour)


and replace the eggs with chia seeds (they bind the legume and provide extra protein-rich nutrition).


So, here's my three step non-recipe for delicious legume-baked cookies:

  1. In a food processor, soak the chia seeds in maple syrup / honey and warmed coconut oil (be generous with both the oil and the sweetener. It is a treat after all)

  2. Blend cooked chickpeas with the seeds until smooth. Let sit for 45 min while you preheat the oven at 180 degrees.

  3. Fold in your dark chocolate chips and form cookies to place in the oven.

Because the ingredients are all raw, it is safe to eat the dough, however, the melting of the chocolate is well worth the wait (see Taxanerin.com for more on this) and the cooking time will be roughly three times as long as with grains (ie 60-75mins).
